Avocado Pesto (vegan)

Ready in 10 minutes.
Serves 8 people.

Ingredients

  • ½ cup fresh sweet basil leaves
  • 2 cloves garlic
  • 1 avocado
  • 1 T lemon juice
  • zest of one lemon
  • 1 T raw Almonds
  • ¼ c water (more if desired)
  • 3 T nutritional yeast
  • ⅓ c extra virgin olive oil
  • salt to taste 
  • pepper to taste 

Preparation

  1. Using a blender or food processor, blend  basil, garlic, avocado, lemon juice, zest,  almonds, water, and nutritional yeast until smooth.   
  2. Mix in extra virgin olive oil. 
  3. Season with salt and pepper to taste.
  4. Tip – for best taste eat immediately. The avocado and basil brown as they oxidize but it is still edible.  The sauce is great in  pasta, tossed with squash, as a spread in sandwiches or on crackers or chips!
