Serves 4-6 people.
Ingredients
- 1 lb pasta noodles (any kind)
- ½ c extra virgin olive oil
- 3 cloves garlic, minced
- ¼ c chicken broth
- 1 T lemon juice
- zest of ½ lemon
- ½ c fresh lemon basil leaves, chopped
- salt to taste
- pepper to taste
- Optional: ¼ c heavy whipping cream
Preparation
- Bring a large pot of water to boil over high heat. Add pasta, stir and cook until al dente.
- While pasta is cooking, heat oil on low heat in a separate pan and cook garlic until soft and golden brown.
- Drain the pasta and add the chicken broth to the pot. Heat until boiling. Let simmer for 1 minute while stirring pasta.
- Pour pasta and broth into the pan with garlic mixture. Add lemon juice, zest, and basil leaves. Mix well.
- Season with salt and pepper to taste.
- Creamy option – Add heavy whipping cream once the pasta is poured into the garlic mixture, and mix well before adding lemon juice, zest and basil leaves.
