Ingredients
- ⅔ c brown sugar
- 3T + 1t tapioca starch
- ¼ c unsweetened cocao powder
- ⅛ t himalyan salt
- 3 ½ c almond milk
- 2 T butter-flavored coconut oil
- ¼ c Enjoy Life chocolate chips (cocoa butter)
- 3 t pure vanilla extract
- 2-3 mint leaves for garnish
Preparation
- In a large saucepan, whisk sugar, tapioca starch, cocao powder, and salt. As you whisk, slowly pour in almond milk.
- Continue whisking as you bring to a boil over medium heat. Gently scrape the sides and bottom of the pan.
- When the mixture begins to boil, reduce heat to low and simmer until the mixture thickens. This will take 1-2 minutes.
- Remove heat and add coconut oil butter, chocolate chips, and vanilla extract. Mix until smooth. Remove lumps that do not dissolve.
- Pour the mixture into 6 individual cups or one large dish. Cover and refrigerate. Garnish with mint leaves before serving.
