Ingredients

Preparation

  1. Preheat oven to 325˚F (163˚C). (Optional tip: Line 12-cupcake pan with cupcake liners for easy  removal. )
  2. In a bowl, add the bananas and coconut butter. Mash until smooth. 
  3. Stir in the brown sugar, cinnamon, cacao powder, eggs, vanilla, salt, and flours. 
  4. Add baking soda, and stir until the batter is smooth. Stir in the chocolate chips. 
  5.  Fill cupcake liners 3/4 full with batter. 
  6. Bake for 25 to 35 minutes , or until a toothpick comes out clean.
  7. Remove muffins from pan as soon as they are finished to prevent further cooking.

Ingredients

  • 1 T avocado oil
  • ½  c chopped yellow onion
  • 3 cloves garlic, peeled
  • 4 c potatoes, cut into 1/2-inch chunks, separate pieces with skin
  • 3 c chicken broth
  • 1 c  organic milk
  • ½ t  Himalayan salt 
  • ½ t black pepper, freshly ground
  • 1 ½ c shredded extra sharp cheddar cheese
  • crumbled bacon, chopped chives, sour cream  for garnish, optional

Preparation

  1. Heat a large saucepan over medium heat. Coat with avocado oil.  
  2. Sauté onions and garlic until tender. 
  3. Add potatoes skin pieces and broth; bring to a boil. Reduce heat and use a hand immersion blender to purée the soup mixture until smooth. 
  4. Add in potato pieces without skin. Cook until tender, stirring constantly to avoid

Ingredients

Preparation

  1. In a large mixing bowl, combine the dry ingredients: flours, sugar, baking powder and salt. Mix well. 
  2. In a large measuring cup, add the wet Ingredients: eggs, almond milk, coconut butter and vanilla extract. Stir gently. 
  3. Add the wet ingredients to the dry ingredients and gently fold them together until well combined. This technique will affect the texture of the pancake. Expect the mixture to be slightly lumpy and thick.
  4. Set the batter aside to rest and  heat the griddle or pan over medium-low heat.. Add a tablespoon of coconut oil to the heated surface. 
  5. Gently stir the batter to release remaining lumps.
  6. Pour about 3 teaspoons  of batter per pancake onto the pan. Cook until bubbles appear on the surface and the edges are set. Then flip and cook until golden brown.  Repeat with remaining batter. 
  7. Serve pancakes with powdered sugar, dried blueberries and maple syrup.

Ingredients

Preparation

  1. In a large saucepan, whisk sugar, tapioca starch, cocao powder, and salt. As you whisk, slowly pour in almond milk. 
  2. Continue whisking  as you bring to a boil over medium heat. Gently scrape the sides and bottom of the pan. 
  3. When the mixture begins to boil, reduce heat to low and simmer until the mixture thickens. This will take 1-2  minutes. 
  4. Remove heat and add coconut oil butter, chocolate chips, and vanilla extract. Mix until smooth. Remove lumps that do not dissolve.
  5. Pour the mixture into 6 individual cups or one large dish. Cover and refrigerate. Garnish with mint leaves before serving.

  • 8 garlic cloves, minced
  • 24 chicken wings
  • 1 T salt

Preparation

  1. In a large mixing bowl, add chicken wings, garlic, zest, and salt.  Evenly coat chicken with marinade.  Cover and refrigerate overnight. 
  2. Place raw wings thin skin up on a tray.   Cook in an air fryer for 20 minutes at 400F.  
  3. Flip wings and cook 20 more minutes at 400F. 
  4. Tip: For extra crispy skin, cook up to 20 more min on the second side at 400F.   Adjust to your personal preference.

Ingredients

  • 1 lb pasta noodles (any kind)
  • ½ c extra virgin olive oil
  • 3 cloves garlic, minced
  • ¼ c chicken broth
  • 1 T lemon juice
  • zest of ½ lemon
  • ½ c fresh lemon basil leaves, chopped
  • salt to taste 
  • pepper to taste
  • Optional: ¼ c heavy whipping cream 

Preparation

  1. Bring a large pot of water to boil over high heat. Add pasta, stir and cook until al dente.
  2. While pasta is cooking, heat oil on low heat in a separate pan and cook garlic until soft and golden brown.
  3. Drain the pasta and add the chicken broth to the pot. Heat until boiling. Let simmer for 1 minute while stirring pasta.
  4. Pour pasta and broth into the  pan with garlic mixture. Add lemon juice, zest, and basil leaves. Mix well. 
  5. Season with salt and pepper to taste. 
  6. Creamy option – Add  heavy whipping cream once the pasta is poured into the garlic mixture, and mix well  before adding lemon juice, zest and basil leaves.

Ingredients

  • 16 oz fresh rice noodles
  • 6 T avocado oil
  • 2 c chinese broccoli, 1.5 in pieces
  • 1 c shiitake mushrooms, sliced
  • 8 cloves garlic, finely minced
  • 4 eggs, beaten
  • 4 t granulated sugar
  • 8 t oyster sauce
  • 8 t dark soy sauce
  • 8 t sweet soy sauce
  • 8 oz chicken stock
  • 1 c Holy Basil or Sweet Thai basil leaves
  • 2 Thai chili peppers, thinly sliced
  • white pepper to taste 
  • lime juice to taste
  • fried garlic to garnish
  • green onions to garnish
  • optional: chicken or firm tofu

Preparation

  1. Peel apart the fresh rice noodles. If not bought the same day, use a pot of hot water to loosen the strands from each other.
  2. In a wok on high heat, add oil and coat the inside. Stir fry broccoli and mushrooms until broccoli starts to wilt. 
  3. Add garlic and stir quickly for 10 seconds. 
  4. Add noodles and gently stir to mix with mushrooms and pasta. Then pour in eggs to coat noodle strands. Let eggs set and toss mixture lightly. 
  5. Add sugar, soy sauces, chicken stock and thai basil. Mix well, taking care not to mash the noodles. Cook until sauce starts to bubble. 
  6. Add pepper and lime  juice to taste. Garnish with  fried garlic and green onions on top.
  7. Optional extra protein – In step 2, add chicken or firm tofu as well.
