Decadent Chocolate Pudding (Vegan)

Serves 6 people

Ingredients

Preparation

  1. In a large saucepan, whisk sugar, tapioca starch, cocao powder, and salt. As you whisk, slowly pour in almond milk. 
  2. Continue whisking  as you bring to a boil over medium heat. Gently scrape the sides and bottom of the pan. 
  3. When the mixture begins to boil, reduce heat to low and simmer until the mixture thickens. This will take 1-2  minutes. 
  4. Remove heat and add coconut oil butter, chocolate chips, and vanilla extract. Mix until smooth. Remove lumps that do not dissolve.
  5. Pour the mixture into 6 individual cups or one large dish. Cover and refrigerate. Garnish with mint leaves before serving.
