Lemon Basil Pasta

Ready in 25 minutes.

Serves 4-6 people.

Ingredients

  • 1 lb pasta noodles (any kind)
  • ½ c extra virgin olive oil
  • 3 cloves garlic, minced
  • ¼ c chicken broth
  • 1 T lemon juice
  • zest of ½ lemon
  • ½ c fresh lemon basil leaves, chopped
  • salt to taste 
  • pepper to taste
  • Optional: ¼ c heavy whipping cream 

Preparation

  1. Bring a large pot of water to boil over high heat. Add pasta, stir and cook until al dente.
  2. While pasta is cooking, heat oil on low heat in a separate pan and cook garlic until soft and golden brown.
  3. Drain the pasta and add the chicken broth to the pot. Heat until boiling. Let simmer for 1 minute while stirring pasta.
  4. Pour pasta and broth into the  pan with garlic mixture. Add lemon juice, zest, and basil leaves. Mix well. 
  5. Season with salt and pepper to taste. 
  6. Creamy option – Add  heavy whipping cream once the pasta is poured into the garlic mixture, and mix well  before adding lemon juice, zest and basil leaves.
